Coconut Rice and Peas: A Recipe

We had a fabulous Christmas dinner yesterday. I tried a new recipe as a result of a conversation with one of my dear blogosphere friends, Kelly, a couple of weeks ago.

If you're ever throwing together a Carribean-inspired menu and need a side dish, here's one for your recipe file. Oh, it was so divine.

The cost was less than $4 but you'd never know it!

    I tried a beef rib roast this year. It was a HIT!
